Biscuit quest – try #1

Once when I was a kid,, I heard an old lady at a church supper say, “There are two kinds of cooks at church suppers: the ones who bring biscuits out of a can, and the ones who bring biscuits made from scratch.” LOL

I want to be the type that makes the biscuits from scratch so I am now, 35 years after hearing that comment, on the quest to find the perfect biscuit recipe. It needs to be flaky on the inside, perfectly crisp on the outside, and rise up in the oven like nobody’s business. I tried tonight with 2 cups all purpose flour, 1 Tbl baking powder, 1 Tbl sugar, 1 tsp salt, 1/2 cup frozen butter (grated), and 3/4 cup milk, cut out with my vintage biscuit cutter, and baked at 425F for 14 minutes in a convection oven.

They were delicious with honey from a friend’s hives, but the quest isn’t over.

Delicious, but not tall or flaky enough

I’m going to keep tinkering. I need a taller, flakier biscuit. Back to the drawing board!
