My chili recipe

Sahara had fiends over for dinner almost every night this week after band camp.  I made chili one night, and her friend loved it so much she wanted my recipe.  If it passes the kid test, it’s definitely a share- worthy recipe!

Early in the day, boil about 2 lbs. of Small red beans for an hour, and then turn the heat down to let them simmer all afternoon until they’re nice and soft.  Drain the water off (this is great to water plants once it’s cooled!).

Brown about one pound of good quality ground beef and drain off the grease. Return the meat to the pan and add one diced onion.

To that add:
2 Tbl. paprika
2 tsp. oregano
1 1/4 tsp. cumin
1 1/4 tsp. garlic powder
1 1/4 tsp. cayenne
3/4 tsp. onion powder
Stir well.

Add 1 Can Rotel (tomatoes with hot peppers) and 2 quarts of tomato juice and the beans. Stir well. Let simmer 30 minutes.

Serve with grated sharp cheddar cheese, sour Cream, and Blue Diamond GMO free tortilla chips.

Any leftovers Can be mixed with rice and used to stuff green peppers!
