Since I’m still healing from surgery, I’m pretty much functioning with one hand, and I wear out so quickly. Recipes need to be easy and fast to make with minimal prep.
This is a super easy dinner for the crockpot: bbq short ribs and sweet potatoes.
The ingredients are minimal. It’s a dump it all in kind of recipe. The hardest thing was cutting the onion with one hand.
Put short ribs in the crockpot with a large chunked up onion.
Mix 2/3 bottle of bbq sauce with 1/3 cup of honey and a small amount of flour (I used under 1/4 cup).
It looks lumpy when mixed. Just give it a good stir and dump it in the crockpot on the ribs.
Cook on low for 6-8 hours. Plate and top with reserved bbq sauce.
Wash sweet potatoes and toss in a second crockpot with an inch of water. Cook on low 6-8 hours. Serve sliced open with brown sugar and cinnamon and pecans on top.
Add a green veggie to round it out!
